How to Make Caramelized Chocolate

Have you baked with caramelized chocolate? If not, then hold on to the baking mitts and turn on the oven because adding this tidbit to your cookbook will be the best thing ever!

It’s a win-win!

Roasting chocolate in the oven creates a strong nutty fragrance and produces something slightly less sweet with an assertive caramel flavor.

And in this blog post, I’m going to show you how to make caramelized chocolate.

It so easy to do. You’ll love it!

How to Make Caramelized Chocolate

Let’s get started roasting the chocolate. Using an 8″ baking pan stir in 9-ounces of white chocolate and 1/8 teaspoon of salt. Bake @ 250°F (130°C).

According to your oven, the chocolate needs to be stirred every 10 to 15 minutes until the chocolate becomes a peanut butter color (approximately 1 hr/30 min).

Watching the YouTube video will give the end-results of the color and the texture of the caramelized chocolate.

In addition, the caramelized chocolate needs to rest overnight. The next morning, break into pieces, and store in an airtight container. The chocolate will stay fresh for up to 4 months.

So, don’t forget to make extra for all the baking goodies and don’t miss out on the ganache recipe. It’s coming soon!

Intimate Wedding Anniversary Cake

An intimate wedding anniversary cake. It’s perfect for a small wedding or to celebrate a milestone anniversary with friends. 

The design of this wedding anniversary cake can be changed and the heart (with or without) the bridal couple in the center and with this in mind, the doves are the main focal part of the design.

Anyhow, attach the doves to the heart with royal icing and allow the decoration to air dry on a cake dummy before placing onto the buttercream cake.

On the back of the heart, a dab of buttercream will adhere the design to a chilled cake.

Finally, long black hat pins for the eyes, adheres the doves onto the heart design. Last but not least, don’t forget to remove the pins before serving the cake.

Be sure to stop and watch the wedding anniversary video. You will be delightfully amazed on how easy the decorations are to make!

Ever wonder how to make square cupcakes and where do you purchase square cupcake liners? I did. Over and over again, the internet yielded no answers to my inquiries.

For all my effort, it was a waste of time.

Since you buzzed the hive, life has gotten easier. It’s a simple answer to a perplexing question. And as a result, ya gotta love me!

To give the design ‘pizzazz’, square cupcakes can be glazed (above photo), icing dripped or decorated with squares of chocolate (below is Lindt White Coconut) or add fondant toppers.

The elegance of square cupcakes beats the drum with style & grace.

Lest don’t forget, all the Minecraft or Sponge Bob parties that need squares to compliment the celebration theme. By the way, It’s hip to be square.

There is one more thing I need to mention: cupcake liners with foil inside the paper are easier to shape into squares.

This contemporary Barbie Silhouette Cake gives an uptown jive designed in the color theme – red, white and black.

Why not pink? Simple. Not all gals continue to gorge on pink after their 5th birthday. Sooo…this is a sophisticated version for all the sisters who still love Barbie forever ‘n ever.

To be totally honest, I was a late Barbie lover bloomer. My mother would not allow me to play with a Barbie or Ken. Her remarks were , “the body shapes are out of proportion … grotesque! What body looks that weird?”

(Now’s the time to say that Mom was 5’2″ & Dad 6’1″?) sealed

In my late teens,  I began to resemble this gal on the Barbie Silhouette Cake and began to morph in Barbie’s image more ‘n more.

I was in the ‘dithers.’ I was cursed by hormones.

And then people couldn’t remember my name.  *sigh* Instead of Brenda, I’d hear, “Barbie!”

Needless to say, as soon as the name change would happen, I’d be a teary-eyed emotional wreck. My body image was pratically in the sewer with the words Mom thought of Barbie – gross ‘n weird.

It wasn’t the greatest time period in my life.

I began to morph even more in my twenties. Modeling agencies loved long legs ‘n skinny gals – grotesque ‘n weird became a good thing.

And the best thing EVER to happen to me? I had a baby girl. Did she play with Barbie? She sure did! All the Barbie dolls of the world.

Were their body issues? Uh-huh. But now she’s all grown-up and proud to be a Barbie body. How come?

‘Cause with longer legs … she can eat more.

How to make trendy cakes using template designs will make your cakin’ life easier and less stressful.

Learning design dimensions as a newbie was a hard lesson. And without a firm design, there was disappointment and times the cakes looked weird or off-balance and there was redo – over ‘n over.

Now, I’m not saying ALL the cakes made  winging the design was a total wash-out. But looking back on those newbie days, I wish I’d learn a ‘wee’ bit quicker on how important designing and cakin’ meshed together for success.

Throughout my cakin’ journery, I’ll make a few comments of what I did … not exactly right? And there are multiple examples when stopping to think. Keep in mind, this gal doesn’t exert herself over-the-stove to make a livin’. Kudos who do! I feel your back pain.

Now don’t think too much of this image, I was a newbie and Photoshop was __?  With that in mind, how could I have made this design more amazing?

Simple. The bottom tier was less equal in height to the top. Sigh. All that sugar work (including the ducky) was a step below of being what? Awesome. And that logo? Seriously … it needs to be? Smaller?

Okay … don’t look at the HUGE distorted logo. Sigh. My turning point for cake design was this Bas Relief Candle Cake.

Proud of this wedding cake. I began to get it right. And all it took was a designated sketch dimensional design. Whew!

Yeah, I know all of these cakes look pretty darn good (for a newbie) but just take a step back and know that with a template … it’s a darn sure thang!

Dulce de Leche Ganache

Just the sound of Dulce de Leche Ganache rolling off of the tongue ignites visons of silky caramel delight.

Doesn’t it?

A traditional Argentinian dessert made by caramelizing sugar in milk, La Lechera has made this ganache one step easier.

When beginning this blog I made a promise. Any steps along the way that had given me headaches would be eliminated for my busy bees.

Just the thought of getting hateful comments…sigh...I hate getting stung and gotta protect my hive.

And this Dulce de Leche Ganache is rated high for success.

One promise that was made:  simple  & successful ganache  recipes.

If you’re a newbie to the caking world ganache is a good way to be buzzing the hive with no sign of entry.

In the beginning, I must have thrown out a multitude of ganache concoctions. In fact, it was when noticing the hubby getting a little wide in the girth that the racoons began to get fatter.

Seriously, the head racoon is super-sized. He’d fight off the mob when throwing out a batch. One night he took the whole bowl and ran off. Didn’t see him for a week. He probably went into a sugar coma.

Now he stares at the backdoor and looks perturbed with getting food scraps. ‘Where’s the ‘fr****ing’ chocolate dudette!’

With a smooth creamy taste of caramel, Dulce de Leche Ganache will be one of your favorites recipes. No hours spent caramelizing the condensed milk or time / fails making caramel sauce.

It’s a guarantee ‘nailed it’ recipe. And having La Lechera Dulce de Leche in the fridge, it’s ‘nom nom delicious!

Dulce de Leche Ganache Yum
A traditional Argentinian dessert made by caramelizing sugar in milk, La Lechera has made this ganache one step easier. With a smooth creamy taste of caramel, Dulce de Leche Ganache will be one of your favorites recipes. ~ recipe by BB Bakes Sugar Art

Instructions
  1. Place chocolate in a heat-proof bowl. Note: if using bar chocolate, chop into small pieces. Pour in the dulce de leche; stir to combine.
  2. In a saucepan bring cream and corn syrup to a simmering boil. Once the mixture begins to foam, immediately remove from heat.
  3. Pour cream mixture over chocolate and dulce de leche. Swirl bowl to submerge chocolate.
  4. Cover bowl and allow to rest for 5 minutes.
  5. Whisk gently until smooth.
  6. Press plastic wrap / saran wrap over the ganache. Allow to sit onto the countertop overnight.
  7. Beat at medium-speed until fluffy, about 1 minute.
  8. For a beautiful frosted cake, spread a thin layer of ganache on top and sides of cake. Place the cake into the fridge until ganache is firm to touch. Proceed to frost the cake with ganache. Note: the first layer of frosting being chilled makes it easier to apply the second layer of ganache for a beautiful finish to your cake.

The wise little owl boasted to his prankster friend, “Wow! Look at me! I’m featured on Owl Cake.”

Crowley’s covered his eyes with a right wing and moaned, “That’s all I need in my life right now is a feather fluffed owl hooting in my oak tree.”

So the crow flew off deeper into the woods to get away from the boasting owl.

He was on a mission.

A mission to make the owl cake pale in comparison. It was the time to show up his owl friend and quieten all his hoots.

He had to decide what to do.

And then the crow remembered the town was having a bake sale and off he flew.

He was on a mission and knew what to do.

Gathering lots of trinkets that glistened in the sun, he decorated a cake with his treasures, one by one.

A crowd began to gather with lots of ‘oohs’ and ‘ahhs’ for his work of art. And the judges gave him a blue ribbon for doing his part.

With the proof in his beak he flew towards the woods. His mission to make a crow cake felt so good.

The little owl looked at the ribbon and rotated his head 270 degrees. You’re a little prankster that takes what he sees. A stolen ribbon has nothing to prove.  An owl cake has meaning, if you get my groove.

Seeing the hurt in the eyes of the crow, the wise owl knew. Crowley had won the award so he began to hoot.

‘So let’s all give a hoot!’

And they all followed suit.

The moral of the story:  In a world where you can be anything. Be yourself.
