Dulce de Leche Ganache

Just the sound of Dulce de Leche Ganache rolling off of the tongue ignites visons of silky caramel delight.

Doesn’t it?

A traditional Argentinian dessert made by caramelizing sugar in milk, La Lechera has made this ganache one step easier.

When beginning this blog I made a promise. Any steps along the way that had given me headaches would be eliminated for my busy bees.

Just the thought of getting hateful comments…sigh...I hate getting stung and gotta protect my hive.

And this Dulce de Leche Ganache is rated high for success.

One promise that was made:  simple  & successful ganache  recipes.

If you’re a newbie to the caking world ganache is a good way to be buzzing the hive with no sign of entry.

In the beginning, I must have thrown out a multitude of ganache concoctions. In fact, it was when noticing the hubby getting a little wide in the girth that the racoons began to get fatter.

Seriously, the head racoon is super-sized. He’d fight off the mob when throwing out a batch. One night he took the whole bowl and ran off. Didn’t see him for a week. He probably went into a sugar coma.

Now he stares at the backdoor and looks perturbed with getting food scraps. ‘Where’s the ‘fr****ing’ chocolate dudette!’

With a smooth creamy taste of caramel, Dulce de Leche Ganache will be one of your favorites recipes. No hours spent caramelizing the condensed milk or time / fails making caramel sauce.

It’s a guarantee ‘nailed it’ recipe. And having La Lechera Dulce de Leche in the fridge, it’s ‘nom nom delicious!

Dulce de Leche Ganache Yum
A traditional Argentinian dessert made by caramelizing sugar in milk, La Lechera has made this ganache one step easier. With a smooth creamy taste of caramel, Dulce de Leche Ganache will be one of your favorites recipes. ~ recipe by BB Bakes Sugar Art

Instructions
  1. Place chocolate in a heat-proof bowl. Note: if using bar chocolate, chop into small pieces. Pour in the dulce de leche; stir to combine.
  2. In a saucepan bring cream and corn syrup to a simmering boil. Once the mixture begins to foam, immediately remove from heat.
  3. Pour cream mixture over chocolate and dulce de leche. Swirl bowl to submerge chocolate.
  4. Cover bowl and allow to rest for 5 minutes.
  5. Whisk gently until smooth.
  6. Press plastic wrap / saran wrap over the ganache. Allow to sit onto the countertop overnight.
  7. Beat at medium-speed until fluffy, about 1 minute.
  8. For a beautiful frosted cake, spread a thin layer of ganache on top and sides of cake. Place the cake into the fridge until ganache is firm to touch. Proceed to frost the cake with ganache. Note: the first layer of frosting being chilled makes it easier to apply the second layer of ganache for a beautiful finish to your cake.

The wise little owl boasted to his prankster friend, “Wow! Look at me! I’m featured on Owl Cake.”

Crowley’s covered his eyes with a right wing and moaned, “That’s all I need in my life right now is a feather fluffed owl hooting in my oak tree.”

So the crow flew off deeper into the woods to get away from the boasting owl.

He was on a mission.

A mission to make the owl cake pale in comparison. It was the time to show up his owl friend and quieten all his hoots.

He had to decide what to do.

And then the crow remembered the town was having a bake sale and off he flew.

He was on a mission and knew what to do.

Gathering lots of trinkets that glistened in the sun, he decorated a cake with his treasures, one by one.

A crowd began to gather with lots of ‘oohs’ and ‘ahhs’ for his work of art. And the judges gave him a blue ribbon for doing his part.

With the proof in his beak he flew towards the woods. His mission to make a crow cake felt so good.

The little owl looked at the ribbon and rotated his head 270 degrees. You’re a little prankster that takes what he sees. A stolen ribbon has nothing to prove.  An owl cake has meaning, if you get my groove.

Seeing the hurt in the eyes of the crow, the wise owl knew. Crowley had won the award so he began to hoot.

‘So let’s all give a hoot!’

And they all followed suit.

The moral of the story:  In a world where you can be anything. Be yourself.

Can I Refrigerate a Fondant Cake?

Can I refrigerate a fondant cake? How do I keep my fondant decorations from melting?  I read these questions in Facebook groups all the time.

And yes you can! Let me show you how.

Here are examples of decorated cakes that were refrigerated. Yep, these cakes were in the fridge fully decorated before these photos.

Unicorn Princess Cake – An enchanting buttercream cake with fondant decorations and gorgeous Unicorn Sprinkle Pop sprinkles.

Flamingo Shower CakeBella the Flamingo fondant cake with fondant and gumpaste decorations accented with Wilton Easter sprinkles on a buttercream border.

Mermaid Cake – Color dusted Merry the Mermaid on a fondant cake with fondant ruffles accented with cookie sand and candy pearls.

Princess Cake – a 2-tier fondant ruffled Princess cake (except the crown) with the brooch and pearls.

And photo down below: the top tier of a wedding cake (excuse the pic, it’s one of the 1st and before my camera) covered in fondant with a sugar lace design. The tier is in the refrigerator waiting for assembly.

The best part of a chilled cake? It stabilizes the cake for delivery. With this technique, you will never post, Can I refrigerate a fondant cake? again.

And if you live in a humid hot area, this technique will keep the flowers and toppers from wilting.

I can still remember the 1st fondant cake. I had a panic attack with nightmares that the fondant had slowly slid off the buttercream. I’d wake up and check to make sure the cake was still standing. It was dismal.

And then Erica O’Brien saved the day. I’d actually like to take credit for this cake problem solver, but it wouldn’t be fair.  Thanks Erica, I sleep like a babe now.

Step 1:  On a safe cutting surface set box upright.  Carefully use a knife or exacto blade and cut down one side of the box.

Step 2.  Using shipping tape, flip the box over and secure the top flaps. With the box right up, tape the center of the box. Flip the box over and tape the bottom outside of the box for stability. In my opinion, you cannot use enough tape for the bottom if using this box for delivery.

Step 3.  Place a small baking mat onto the bottom of the box to keep the cake from sliding for security.

Step 4. Place the finished cake onto the mat.

Step 5. Close the box with strips of shipping tape and place into the fridge. The corrugated box will soak up any moisture. Allow the box to come to room temperature for at least 10 minutes before removing the cake.

So, start hoarding those Amazon boxes. I do.

Little girls dream of being a ballerina and this dancing Ballerina Cake will keep you on pointe with a cake pattern and time lapse video.

Let’s meet a Ballerina named Florina and warmup at the barre.

Florina was a ballerina who loved to twirl. Even strangers on the streets asked, “Are you dizzy, girl?”

Spinning three times and ending with a plie, Florina told everyone who’d listen, “I’m going to be a ballerina on stage one day.”

Her favorite class was with the ballerina, Madame Trudeau. It was the day of the week she wore her pink hairbow.

Stretching at the barre and getting lots of praise, she reminded the class their first recital was in five days.

The music began and chill bumps dotted her arms. It was time to dance and show off her practiced charms.

Smiling brightly with her chin up slightly, she pranced onto the stage. For this was her moment to shine as she spun on a dime and judging by the  audience response, clearly amazed.

She was so excited after the show and her dad gifted her with a rose. Not knowing what her parents had in store, they led her into a room with balloons galore.

And to her surprise classmates were waiting, anticipating the look upon her face. Oh me. Oh my. She had completely forgotten, it was her sixth birthday.

Heart full of grace her eyes focused on the cake and she squealed with delight. Closing her eyes to blow out the candles, she whispered giddily, “I wish, I might, remember this night” and her eyes shone bright.

A ballerina on stage on her birthday and a ballerina cake, those three wishes had come true.

In her own little world Florina the ballerina began to twirl. She twirled and twirled…and twirled.

Gifts to the mermaids that were known to swim by the shore. Candies and chocolates even a few of her favorite s’mores.

A gust of wind blew the clouds away and on the nearest buoy she saw her first mermaid.

Bedazzled in splendor tapping her tail in rhythm. The lighthouse and the rocks turned into an amazing prism.

Enchanting folklore rode with the wave. The lure of the siren song lifted her heart to be brave.

Mesmerized to swim to the musical sway. Should she go to the mermaid or listen to her mother and stay?

A hypnotic tone came from a sandhill nearby. The mystical mermaid beckoned with a smile.

Dazzling in the mermaid’s hair a sea urchin strand of pearls. Ocean creatures swam around creating sandy swirls.

Relaxing on a pearly pillow inside an iridescent shell, lounged the fashionable diva who knew her so well.

All about the tokens on the beach given to her pods. How the merfolk queen had graciously given the birthday nod.

For the celebration expect a big surprise, the gift will be a trustworthy mermaid in human folk disguise.

The party started and she couldn’t find her mom. And where was the mermaid who promised to come?

Lights dimmed, candles blazed bright and her eyes blinked twice to see. Standing before her was the prettiest mermaid, this day was meant to be.

Gifting a replica Mermaid Cake her heart began to soar and never in her wildest dreams imagined this before.

For all this time she’d never guessed what life had in store. For her Mother was the mermaid, the one she’d always wished for.

Flamingo Shower Cake

Bella knew that she was a little too flamboyant, but she didn’t care. The dream of being on a Flamingo Shower Cake  was known everywhere.

Primping and styling her vibrant feathers took up most of her time.

And  the beauties in the colony kept telling her to eat more algae, plankton and brine.

One sunny day a purple ribbon waved to her in the shallows. She was destined to be here in the lagoon for the ground was hallow.

Wading closer to the bungalows a rain boot floated by the shore. On the beach she found a matching umbrella she simply adored.

To her surprise a golden necklace glistened half hidden in the sand.

And when a loving beak placed the beads around her neck Bella claimed Lingo, her flamingo man.

That’s when she heard the clicking noise coming from the pier. The sound was soothing she had no fear.

With a closer look, the camera came into view. The dream of being on a Flamingo Shower Cake was finally coming true.

Posing and twirling for just the right angle, when the session was over the human asked for her handle.

He loved her style, she was sure to make the cover. She was a flamboyant flamingo like no other.

Bella was enlightened that day.  A lesson she could relate. Looking for beauty in everyday things she became a beauty queen.

And to add to her joy and happiness she’d found Lingo, the flamingo mate of her dreams.

Moral of the story: Just be you. Life isn’t always as it seems. Always smile. And allow your inner beauty to glow. For this is life and it’s your show.

Unicorn Princess Cake

Unicorn Princess Cake

Everyone has a unicorn, it’s just the matter of tracking her down and this Unicorn Princess Cake comes with a magical GPS.

Folklore reveals that only the pure at heart can catch a unicorn. And since you’ve landed here on this page, you meet the qualifications. Featuring a time lapse video this Unicorn Princess will materialize right before your eyes.

The day began as a normal day….

It turned into a magical morning the moment candy sprinkles began falling from the sky.

Twirling around with excitement, tasting the sweetness on my tongue, the soothing sounds of  wind chimes flowed though the vibrant leaves nearby.

And as I gazed into the crystal clear water, precious gemstones twinkled back at me like stars.  A ruby here, an emerald there and faceted diamonds were everywhere.

Entranced in the babbling brook, a meadow came into view.  Lollipops grew big as trees and gumdrops dotted the ground. And when the Unicorn Princess raised her head I didn’t make a sound

I took a step towards her and my feet began to glow and that’s when I noticed over my head was a brilliant rainbow.

Keeping time with the chimes the Unicorn Princess began to prance and when the musical beat grew stronger she performed the unicorn dance.

When the sound of music stopped she took a graceful curtsey.

Stifling  a loud giggle, oh me oh my, she looked so girlie.

The brightness of the day began to fade and all colors turned to grey. And as I watched the Unicorn Princess slowly vanish, my heart filled with dismay.

Did she leave because of me? I so wanted her to stay.

Oh please, oh please come back to me, it’s my birthday.

With a shake and a hug, a soft voice said, ‘Good morning, it’s time to celebrate.’

But I was in a bad mood, my dreams were smashed and I didn’t want to play.

If I didn’t have a Unicorn Princess my friends could come another day.

Walking into the room to oohs and ahs I couldn’t believe my eyes. Bedazzled in all her glory was the biggest surprise.

My birthday wish had been granted, the Unicorn Princess was true. I’d been gifted a treasure and I knew just what to do.

I’d take lots of photos and share them for years to come. For I’d been blessed on my birthday to see two unicorns.

And I’d caught one.

Imagine. Dream. Believe.

Apple Pudding Cake

This scrumptious Apple Pudding Cake mysteriously disappeared so fast I had to bake another one just to do the pics for this tutorial.

Even after a stern, ‘Hooves off, dudes!,’ and getting nods of understanding it still disappeared.

And the weirdest thing is no one had an inkling where the darn thing vanished.

All I got out of the herd was, “Do wut?”

Like I didn’t know? The herd must have been thinking there was slack in my rope.

C’mon now, this ain’t my first rodeo. Didn’t they know that this Apple Pudding Cake was baked specifically for you?

Of all the nerve.

The aroma of cinnamon apples baking in the oven and the herd sniffing around my kitchen should have been the first clue.

Even after doggin’ the main bull toward the pasture it was futile.

Here they’d come, corralling near the oven, over and over again .

The 2nd time baking this Apple Pudding Cake, I got wise.

So very wise.

I got as cuddly as a hornet.

And yep, that’s a surefire way to scatter the herd.

‘Cause there’s nothing like dealing with a bowed up Texas woman in a horn-tossing mood baking an Apple Pudding Cake.

Just so you know, as my horns were holding up my halo and the Apple Pudding Cake was cooling on the countertop, I eventually came down from my high horse.

After photographing for this tutorial, I devoured the slice with the scoop of ice cream on top.

It was amazing.

Just me, cake and a coffee moment.

No roundup was needed ’cause all eyes were focused on the gate for the ‘all-clear whoop’ and once again, the Apple Pudding Cake mysteriously disappeared.

Hey, don’t look at me…

…all I gotta say is,“Do wut?”

Apple Pudding Cake

Apple Pudding Cake
Instructions
  1. Preheat the oven to 375°.
  2. In a microwave-safe bowl, combine apples and cinnamon. Microwave on high until apples are soften, 3-5 minutes.
  3. In a separate bowl, whisk together flour, sugar, baking powder and salt.
  4. In a measuring cup, add milk, butter and vanilla; stir until combined.
  5. Combiner the milk/butter mixture with the dry ingredients.
  6. Fold in the soften apples.
  7. Pour into a 9" deep-dish pie plate.
  8. Bake 30-40 minutes or until a toothpick inserted into the center comes out clean.
  9. Slightly cool before serving.

Love the taste of marshmallows? If that’s a ‘yes siree!’, then  you’re gonna love this Marshmallow Buttercream recipe.

It’s simply delicious.

Bowl lickin’ good.

Fluffy and light, this Marshmallow Buttercream pipes easily onto cupcakes and covers cakes like a dream.

And I’ve fallen even deeper in love photographing these cupcakes after a rainstorm and in stifling 95° heat (known properly as Texas sauna blessings.)

Even though the cupcakes were in the shade, it was a miracle when the buttercream held its peaks.  Ahhh-maa-zing.

A real miracle.

‘Cause let me tell you…there’s nothing like surviving  Texas in July. 

Another thing that I love about this Marshmallow Buttercream: pop the leftover icing into the fridge and make truffles.

The truffles are to ‘swoon’ for. 

Just make sure to hide the secret stash (in the fridge or freezer) ’cause it’s mind-boggling how easy it is for others to find. Label the container something disgusting, anything that refrains others from lid poppin’ and exploring.

‘Cause gross labeling is an extra delectable privacy sort of thing so you don’t freak out when the truffles come up mysteriously missing…

…and nothin’ is so disheartening as ‘disappearing truffles.’

Instructions
  1. On low-speed add butter. Beat butter on medium-speed until light and fluffy, 2-minutes.
  2. Add Marshmallow Fluff; on low-speed, mix until blended.
  3. Gradually mix in confectioners' sugar.
  4. Add vanilla.
  5. With the mixer on medium-speed, beat until light and fluffy, 2-minutes.
