Popular in trendy Texas restaurants, this Smoked Chocolate Cake gets rave reviews. A decadent chocolate cake with just a hint of smoke, it’s the perfect accompaniment  paired with smoked meats and foods on the grill.

‘Smoked chocolate?‘  You bet!  And it’s the ‘best darn thing’, EVER.

And yep, it’s true. Texans will smoke anything imaginable. In fact, if it moos, bleats, oinks, swims, gobbles, wobbles, snaps or strikes at a lightning speed, Texans will slap it on the grill.

Now that’s not saying that this gal is a cheering fan of the majority smoking suggestions above, but when you’re a native Texan it’s a given that you gotta give it a taste or maybe two.

If not, you may be the ‘yellow belly on the grill.’

Sure’nuff,  to peak a Texas gal’s interest all you gotta say is the word, ‘smoked’, add the word, ‘chocolate’ and she’ll  be all ready and rarin’ to go…

Smoked Chocolate Cake
Instructions
  1. Preheat the oven to 325º. Butter and flour (2) 6" round x 2" deep pans. Line bottom of pans with parchment paper.
  2. In a microwave safe bowl, heat the cream and pour over the smoked chocolate chips. Allow to sit for 5 minutes and whisk smooth; set aside to cool.
  3. In a large bowl, stir together sugars and oil. Add egg, egg yolk, and extracts, whisk to combine.
  4. In a medium-bowl, sift together flour, cocoa, baking powder, salt and soda.
  5. In a measuring cup, mix and stir in coffee, raspberry liqueur and milk together.
  6. Gradually add flour mixture to sugar mixture, alternately with milk, beginning and ending with flour mixture; stirring until just combined after each addition.
  7. Whisk in smoked chips glaze until smooth.
  8. Divide batter between 2 (6-inch) or 1 (8-inch) round prepared pan. For best results, wrap pans with damp towel strips or use Wilton Even Strips. (See link in notes on 'How to Bake a Flat Cake.')
  9. Bake until a wooden pick inserted in center comes out clean, 35 - 40 minutes. Don't overbake.
  10. Let cool in pans for 10 minutes. Remove from pans and let cool completely on wire racks.
  11. Note: if NOT adding the raspberry liqueur, add another 1/3 cup brewed coffee. Total = 2/3 cup.

Instructions
  1. Heat oven to 325º F. In an 8"x 8" pan, spray the bottom of the pan with Cooking Spray. Place a 8" square of parchment paper on the bottom of the pan and lightly coat again. Set aside.
  2. Whisk together flour, granulated sugar, brown sugar, baking soda, cocoa, and salt.
  3. In a separate bowl add coffee, vegetable oil, melted butter, sour cream, vanilla extract and egg. Beat with whisk together until smooth.
  4. Add the liquid mixture to the flour mixture and whisk until smooth.
  5. Pour batter into a prepared pan.
  6. Bake 18-20 minutes or until a wooden pick inserted into the center comes out clean. Cool 10 minutes; remove from pan to a wire rack. Cool completely.

  1. Melt the chocolate in top of a clean double boiler over simmering water, stirring until smooth. Set aside to cool completely.
  2. Using an electric mixer, beat the cream and sugar in a large bowl until soft peaks form. Set the whipped cream aside.
  3. Using an electric mixer, beat the mascarpone cheese, melted chocolate and vanilla in a large bowl just until smooth and glossy, about 30 seconds (do not overmix) or fold in the mixture by hand.
  4. Fold the whipped cream into the chocolate mixture in 2 batches.
  5. Pipe immediately, or cover and refrigerate overnight. If chilled, allow to stand at room temperature 1 hour before piping. Transfer the chocolate mascarpone cream to a pastry bag fitted with a large star tip. Pipe.

Instructions
  1. Coarsely chop baking chocolate with a serrated knife then transfer to a heatproof bowl.
  2. Pour the cream into a small saucepan set over medium heat and bring to a boil. Immediately take the pan from the stove and pour over chopped chocolate. Let stand for 1 minute to allow the hot cream to melt the chocolate. Allow the overall temperature to reduce because emulsions form better at 90º- 110ºF.
  3. Whisk the mixture in one direction until smooth and creamy.
  4. Place plastic wrap directly on top of the ganache; press down to seal. Allow to set on the counter for 20-25 minutes or until the ganache's consistency slowly glides down the sides of the bowl.
  5. Put the ganache into a piping bag: test for the consistency or drizzle the ganache onto the Lust Cakes with a spoon.
  6. Drizzle the ganache onto the chilled cake.

Perfect Cake Board Hack – Simple & Save $$

My baking confidence increased ten-fold after discovering this Perfect Cake Board Hack. No scenario is worse to a home baker, than to spend hours on a party creation and then feel the cake  shift, as the cake board buckles underneath their hands from the weight of the cake.

The cardboard circles, found in the local craft stores, has its place in cake decorating. The circles come in handy when cooling and flipping a cake or in the torte and leveling process. But when it comes down to supporting a tiered cake, the circle tends to soak up the oils making the cardboard unreliable and soggy.

This Perfect Cake Board Hack tutorial shows how to have an even # size board for a buttercream or ganache iced cake and a 1/4″ increment added to the board for a fondant cake.

This method is also ideal for those time-consuming parchment rounds, making that tedious task, fast & easy.

Perfect Cake Board Hack – Equipment Required

The cutter cuts perfect circles from 4-inch to a 12-inch diameter at 1/8″ increments and has a double-sided blade allowing for clockwise and counterclockwise cutting; additional cutting blades can be purchased.

Step 1: Set the diameter of the cutter to the size needed. Place a 1/4″ foam core board onto a Fiskars Healing Mat. Align the Martha Stewart Circle Cutter on the foam core board; press down on the center of the cutter and with the other hand use the blade to go backward and forward cutting out the circle. The blade cuts in increments; press down harder as the blade goes deeper, cutting out the circle. Note: don’t expect this action to be a one-time cut. For a smooth cut, do a gradual cut to the foam core board.

Step 2: Lift the cutter from the board. With an exacto knife, follow the ridge of the cut-out circle on the board.

Step 3: Now you have a sturdy cake board with a protective and washable coating for your decorated party cake. It’s a win-win!

Perfect Cake Board Hack – Cutting Parchment

There are many tutorials about how to cut parchment rounds on the web. I’ve tried them all! Nothing compares to the speed of using the Martha Stewart Circle Cutter. It’s super fast & easy!

Perfect Cake Board Hack Parchment Rounds Step 1: Tape a square around the four edges; slightly larger than the size parchment round that is needed. Set the cutter to the diameter.

Step 2: With two swipes around with the blade, you have a perfect parchment round.

Step 3: For the parchment side strips for the baking cake pan, roll-out parchment paper to the length needed. Using the O’ Lipfa Lip Edge Ruler, line the ruler up for the width needed for the parchment strips. Cut-out with an exacto knife on the Fiskas Healing Cutting Mat. Makes the tedious task a breeze!

And for a bonus round: If your mindset is still focused on using the cardboard circles. Get out the glue gun and glue two circles together; two circles = 1/4″.

To protect the cardboard from the becoming unreliable from the oils, use Wilton Fanci-Foil Wrap. Cut-out a larger circle than the cardboard; enough to wrap underneath the cake. Turn the circles over. Pleat the foil and glue the wrap underneath.
